Meal Plan Week of June 16-June 29 - Bonus Week!
Whoopsie! I'm behind! So you get TWO weeks of meals plans put together!
This week we've been enjoying:
Beyond Burgers - honestly we make these once a week. They're so easy and so good! They're in hot demand now! Our Haagen store is sold out until like mid July! Amazon Fresh and Whole Foods are the main stores they're distributing to.
Instant Pot Pulled Pork Sammies - https://www.foodnetwork.com/recipes/food-network-kitchen/instant-pot-barbecue-pulled-pork-sandwiches-3649647 Made these last night with some corn on the cob, watermelon, and slaw from Gaby's cookbook. Perfect summer night meal! The pork was so good!
Roasted Veggie Orzo - https://vanillaandbean.com/lemon-garlic-orzo-with-roasted-vegetables/ This is another popular rotater in our house. You can add whatever veggies you like. Craig doesn't like mushrooms so I usually do extra asparagus.
Freezer Enchiladas! I made Gabys enchiladas a few weeks back and froze half of them. So so easy to pop them in a dish tonight, cover with sauce and cheese, and bake! https://whatsgabycooking.com/sweet-potato-kale-and-black-bean-enchiladas/
For lunches all week I experimented with a non instant pot recipe and cooking it in the instant pot. I made this chili recipe and then just cooked it in the instant pot for 10 min. Turned out great! https://cookieandkate.com/2015/vegetarian-chili-recipe/
If you haven't noticed I don't typically plan more than 4 or 5 meals for the week. I leave Friday, Saturday, and Sunday open. We sometimes eat at home like a homemade pizza or something easy or eat out. It's usually when we have plans so I never know when and if we'll be home. If I can cook at home at least 4 times a week I think that's great!
Next week on the menu we've got:

We do have an ice cream maker so we did make some really good vanilla ice cream and then mixed in BIRTHDAY CAKE OREOS! Yes that's a flavor! OMG they're good. The vanilla base is very simple and good on it's own. It's fun to add in
